Recipe: Savouring Summer by Mastering the Art of Bruschetta
As summer nears, there's nothing quite like a refreshing bruschetta to enjoy on those warm afternoons. This delightful dish is not only easy to make but also bursting with flavour, making it the perfect appetiser or light snack.
To craft the ultimate bruschetta, start with high-quality ripe tomatoes, fresh crusty bread, and premium extra virgin olive oil. While you can experiment with various tomato types, we recommend a combination of three key varieties to achieve the best taste. The secret lies in choosing tomatoes that are rich in flavour without being too watery. Follow our guide to elevate your bruschetta game this summer!
Makes 6 bruschetta
Ingredients
1 Vesuvio tomato or a Cuore Di Bue
1 San Marzano tomato
8 yellow datterino tomatoes,
1 large garlic clove
10 large basil leaves
4 tbsps of extra virgin olive oil
2 tbsps of balsamic vinegar
1 tsp of dried oregano
A generous pinch of flaky sea salt
6 thick slices of sourdough bread or bread of your choice
Method
Slice up all of your tomatoes into small cubes and add to a bowl
Add in loads of roughly chopped basil
Pour in a generous pour of the extra virgin olive oil and a touch of balsamic vinegar
Sprinkle in your oregano and salt and stir
Let this mixture sit for at least half an hour to let the juices soak together
Cut some thick slices of your bread
Place the bread on a hot griddle pan to toast
Once the bread is toasted and still warm, rub the garlic clove all over the face of it
Place your tomato mixture on top of your bread and add a little bit of the dressing from the bowl
