Chicken, Mushrooms and Green Beans casserole

People who love to eat are best people and eating healthy delicious food is one of their priorities that is why I came up with this winter warmer chicken dish recipe that brings the whole family, friends and loved ones together.

INGREDIENTS

1kg chicken breasts (pat dried with kitchen paper towel)

150ml pouring cream

Pinch of salt and pepper

1 whole onion white finely chopped

50ml extra virgin olive oil

Handful fresh coriander

1 tsp fresh crushed garlic and ginger

Pinch turmeric

Pinch chicken spice seasoning

20g button mushrooms

Handful fresh green beans or asparagus

150ml vegetables stock

Method

On medium heat in the casserole pan heat oil and shallow fry chicken breasts until a bit golden brown and cooked through.

Take out and set aside.

In the same pan sauté mushrooms until brown take out and set aside, add green beans fry until al dente (soft but still firm). Take them out.

Add onion, garlic, ginger and all other seasonings and spices expect liquids. Sauté on low heat until translucent.

Add all liquids, allow to simmer until a bit smooth and thick, correct seasoning.

Add in chicken breasts, mushrooms, green beans and garnish with fresh coriander or parsley.

Serve with basmati rice, risotto or couscous.
