This is an edited extract from ‘A House Party in Tuscany’ by Amber Guinness.

Ingredients

1 bottle dry prosecco

3 x 330ml can San Pellegrino Pompelmo

60ml Campari

METHOD

Pour all the ingredients into a large jug and mix with a cocktail spoon until it takes on a pastel-pink colour. Keep in the fridge until needed. Serve in cocktail glasses (or coupes, as pictured). If you are making individual drinks, fill each glass with roughly one-third prosecco and two-thirds fizzy grapefruit. Leave room to top up with enough Campari to turn the drink pink.
