Beans like cannellini beans, butter beans, chickpeas, and more are also versatile because they can add body to a soup, bring plant-based protein to a salad, or provide a tiny crunch.

1. Creamy Garlic Cannellini Beans

These creamy beans are a great dinner recipe if you are craving cacio e pepe, but don’t want to cook pasta. They are peppery, silky, and the addition of spinach brings a great pop of colour.
2. Spicy Harissa Butter Beans
@georgieeatsuk HARISSA BUTTER BEANS ❤️ recipe ⬇️ INGREDIENTS: ⭐️ olive oil ⭐️ 5 garlic cloves, minced ⭐️ 1 red chilli, seeds removed & finely chopped ⭐️ 3 generous tbsp harissa paste ⭐️ 400g finely chopped tomatoes ⭐️ 2 x 400g tins butter beans ⭐️ 1-2 tbsp red wine vinegar ⭐️ small handful fresh dill, finely chopped ⭐️ sea salt & freshly ground black pepper ⭐️ to serve: vegan yoghurt, extra harissa, crusty bread METHOD: 1️⃣ Heat a drizzle of olive oil in a frying pan over medium heat. Once hot, add the garlic and chilli and cook for a minute or so, just to soften. Add the harissa paste and cook for a further minute, stirring constantly, until it releases its fragrance. 2️⃣ Pour the chopped tomatoes into the pan and season with a pinch of salt and black pepper. Bring everything to a simmer and cook for 5-6 minutes, stirring frequently, until the tomatoes have reduced slightly. 3️⃣ Add both tins of butter beans, and their liquid, into the pan. Stir well then bring back to a simmer. Cook for 10-15 minutes, or until the liquid has reduced into a silky sauce. Stir through the vinegar, then taste and adjust the seasoning, adding more salt, black pepper or vinegar, if needed. 4️⃣ Pour the butter beans into a bowl and serve topped with a few spoonfuls of yoghurt, extra oil from the harissa jar, a sprinkle of fresh dill and lots of fresh crusty bread. #veganrecipes #healthyeating #veganlunch #vegandinner ♬ Stolen Dance (Instrumental) - Milky Chance
