On an unassuming street corner in Stellenbosch's cherished historic district sits the newly opened Mill St Bistro.

The brainstorm of culinary whizz Phil Carmichael, Mill St Bistro bears testament to an unfussy yet exceedingly delicious approach to dining. Opening its doors in 2024, the establishment represents a fusion of bistro charm, contemporary flair, and a steadfast commitment to South African flavours.

At its helm is Michelin-starred chef Phil Carmichael – Welsh by birth, South African by choice. Tired of London’s cramped milieu, where he cut his teeth working alongside culinary luminaries such as Michel Roux Jnr, Gordon Ramsay and Jason Atherton, Phil relocated his family to the Cape and embraced a more laid-back, enriching lifestyle. And Mill St Bistro is proof of just that. The interiors are simple yet welcoming, the menu uncomplicated yet charmingly complex. Phil has woven a rich tapestry of South African produce and collaborated directly with independent farmers, producers and fishermen to create his menu.

‘We want our food to be authentic – not just in taste, but in the values it represents,’ explains Phil. ‘It's about celebrating the stories behind each ingredient and minimising our environmental impact, ensuring a transparent journey from farm to table.’

The innovative Coravin system offers diners a curated selection of premium South African wines by the glass, while the cocktails (alcoholic and non-) complement each course beautifully.

The restaurant's design mirrors its culinary ethos, featuring a 64-seater layout that seamlessly connects indoor and outdoor spaces. A wine bar serves as a central gathering point, enhancing a convivial atmosphere ideal for both intimate dinners and casual lunches. The open-plan kitchen adds a theatrical element, allowing diners to witness the artistry behind each dish.
