With a string of restaurants and hotels across five continents, Nobu Matsuhisa is the world's most famous sushi chef. He opened his first joint in sunny Beverly Hills in 1987 - bringing a then-brand-new blend of Japanese and Peruvian flavours to the masses.

These days his miso-marinated black cod is so well-known it's synonymous with his brand. And 30 years on (with the Japanese chef approaching 70), Nobu hasn't slowed down - he's just opened the doors to a hotel in Shoreditch; next on his list is a São Paulo opening, slated for 2018. Here, the super chef shows us how to make sushi and gives us a sneak peek inside the new Nobu Hotel, Shoreditch.
